Falling into new seasons
I had a great weekend at Teens Camping Tour of the West's annual Stockholders in Black Mountain, NC the last weekend of September. I always treasure the opportunities to catch up with close friends as well as see my sister, even if only for a night! TCTW was a chance of a lifetime that made me realize the important things in life, and also made me realize that I wanted to chase after my dream of being a Photographer. I won't go into the details of the trip today because I could literally write ten pages on the topic. I do encourage you to check out their website: tctw.com
On my way back to Boone I realized that fall has rapidly been creeping up on me. I am surrounded by gorgeous mountains that change colors during the fall and I hate to admit that I have been taking advantage of it lately. I have been so wrapped up with assignments that I haven't made time to go outside and enjoy the beautiful weather. So, over fall break I am going to make an effort to go hiking! I also signed up for another half marathon to run on thanksgiving so that will also get me outside.
What is your favorite part of fall? Pumpkins, hay rides, apple cider, fall hues, changing leaves, and halloween are some of my top favorites; however, my absolutely favorite part of fall is the food! Luckily, this week for my studio class we had to capture food. So I did as I always do and found a few new recipes to try from pinterest.com. The recipe that made the final pick was pumpkin cheesecake-filled muffins with a delicious crumb topping. I love to bake, and the fact that these muffins were from scratch made it even better. I had a blast making the muffins, but I had an even better time capturing them with my lens! Below is the final product, but also here is a link to the recipe in case you feel like giving it a try! (They taste best with a fresh cup of coffee!) http://thenonpareilbaker.blogspot.com/2011/10/pumpkin-cream-cheese-muffins-with.html
